It’s the first working day of the week, everyone is alert to face the new challenges of the week and I believe that part of the best ways of going about this is to eat healthily ~ ~ ~ Which is why I am sharing the recipe for these yummy and yet nutritious physalis and golden linseed muffins.
Honestly, any time some fruits find their ways into my breakfast pastries then I know it is definitely going to be a wonderful day. So on this occasion, it’s time for more physalis with some golden linseed! I love muffins to bits, I love physalis and I equally love linseed, which is commonly known as flaxseed so these cute-looking muffins are a combination of three things I enjoy. When I found out that I have both physalis and linseed in my kitchen, I immediately thought of combining the duo for some really tantalizing treats.

These muffins actually taste good and those tiny golden linseed scattered on top makes them so captivating and tempting to taste.
Some suggestions for this combo depending on your choice though;
– Dice the physalis before adding into the flour.
– Blend the golden linseed with physalis before using.
– Add the physalis into the flour without blending or cutting.
Moist, soft, tender and filling ~ ~ ~ Ready whenever you want.
No matter the method you choose, these muffins are all about the enticing, flavorful, tender and delicious pair anybody would want to bite on.
I can spot the linseed scattered over the muffins but where are the physalis, you might ask? Well, those tiny colourful physalises are hidden right inside, which gives you a sweet sensation when you bite right in.
I’d only eaten physalis as a fruit on its own but in these muffins, it is just phenomenal! The tangy flavour and aroma oozing out from the physalis while mixing the muffin batter enveloped my entire house that even my hubby had to admit that the combination was a right choice.
Honestly, these muffins can equally be classified as cupcakes because they have many similarities; moist, soft, tender, tasty and with fine tiny crumbs.
There is no doubt that you will love every bit of these muffins the very moment you munch through them. Interestingly, you can have them for breakfast or at any time of day you want to feed on them ~ they are just spot on!
The ingredients are so easy to pair up and yield into some palatable outcome. Basically, all you need to do is to blend up the physalis with the other ingredients except the linseed until smooth. Then add half of the linseed into an already sieved flour, pour the blended mixture then mix. Afterwards, scoop the muffin batter into a paper-lined muffins pan and bake in a pre-heated oven of 200°C until golden brown in appearance.
But then you also need to insert a toothpick or skewer at the center of at least one of the muffins and if it comes out clean then the muffins are done and ready to be feasted upon ~ But hang on, don’t be in a hurry to devour them, just allow them to cool down a bit and you are free to enjoy them to the fullest.
Full of physalis, golden linseed and a minimal dosage of sugar, I think these are definitely worth having on the list of precious snacks.
They are not overly sweet, besides with the tangy physalis they don’t need to be overly sweet anyway – – – but it is entirely up to you to decide how sweet you want them to be.
I can assure you that these muffins are an ideal snacks to kick-start a great day ahead. Pretty easy to bake, less time-consuming and use easily available ingredients that any anyone can easily grab. So if you are considering a fruity pick-me up for breakfast, don’t search any further just head straight to the shop, grab the necessary ingredients, head over to the kitchen and do justice to the recipe.
