Sometimes all you just need is to keep your food simple but yet delicious.
There is absolutely -- something -- amazingly -- enticing to me about the aubergine (eggplant) that I can never do away with it. Probably, it could be because aubergine is just an excellent source of protein, dietary fibre, vitamins and minerals. Besides, it might also interest you to know that aubergines can help to reduce excess weight, help in controlling cholesterol levels and are also excellent antioxidants.

Ingredients:
- 2 large aubergines
- Salt to taste
- Grated cheddar cheese
- 2 pieces of basil leaves
- 200ml chicken broth
- Chilli pepper to taste
- 1 teaspoon olive oil
- 1/2 tsp. dry parsley leaves
Instructions:
- Wash and slice the aubergines and add in a clean pot.
- Add all the ingredients into same pot except the cheddar cheese.
- Allow to cook until aubergines are tenderized then bring down from heat.
- Allow to slightly cool down then blend until smooth and soft.
- Add in a clean plate, sprinkle the grated cheese over the aubergine soup, garnish with some fresh basil leaves.
- Serve immediately
