EGG SANDWICH WITH CUSTARD

Egg sandwich is simply an easy and appetising dish.
Serve it with custard for a perfect breakfast.
 

Ingredients:

  • 4 eggs
  • 1/2 tsp. dijon mustard
  • 1 tsp. mayonnaise
  • 1/2 onion
  • Salt to taste
  • 1/2 chopped fresh pepper
  • 1/2 sliced cucumber
  • 2 tsps. olive oil
  • 1/4 roughly cut iceberg lettuce
  • 1 sliced tomato
  • 4 tsps. custard

Instructions:

  1. Whisk eggs in a clean bowl
  2. Cut onions, pepper and tomatoes and whisk together with the eggs
  3. Slightly heat up oil in a saucepan and fry turning both sides at 2 mins intervals.
  4. Place bread flat on a plate and arrange cucumber, lettuce and any other vegetables of choice in layers over each other.
  5. Cover the layers with a second bread and cut into halves.
  6. Dissolve custard with cold water and afterwards pour in boiling water to thicken.
  7. Serve custard with sandwiches.
