Today I am super excited to share one of the most yummy and delicious recipes. Lemon meringue crunch!!! I love trying out new recipes and this one is not an exception at all. The original recipe looks more classical however, I decided to tweak the recipe and finally came up with my own delectable version.
Few days ago, I visited a nearby bakery because I wanted to bake something unique from my usual bakes. Although I had several options from the bakery shop but I decided to settle for this Lemon meringue crunch and believe you me, it wasn't a bad idea at all.
On spotting what I intend to bake, I hurried down to the grocery shop nearby, grabbed the required ingredients and headed back home to carry out the act. Before I started baking, I already knew I would love this dessert with a crunchy base topped with filling mix and meringue mix.
The first step is to melt the butter, preferably with a microwave which is a lot more convenient for me. Then add the biscuit crunch mix in a mixing bowl, pour in the melted butter and stir properly to form a slightly thick mixture.
Spread the biscuit crunch dough over a greased baking pan and press down very well using the back of spoon to give a flat surface.
Place in a preheated oven of 150-200 oC and bake for at least 5 minutes. Bring out from oven and set aside to cool down.
Then in another clean bowl, add the filling mix, one egg yolk and 300ml water.
Whisk the mixture properly, pour into a saucepan and place on a medium heat.
Stir until the mixture dissolves properly. Continue stirring until the mixture has boiled. Then pour the boiling mixture over the biscuit crunch base and allow to cool.
Sprinkle 1 tsp. of the meringue mix over the biscuit crunch surface.
Add 1 tsp. water and 1 egg white in a clean bowl and whisk thoroughly. Add the remaining meringue mix and whisk thoroughly.
Then spread the whisked meringue mixture over the cooled filling. Place back in the oven and reduce heat to 150oC.
Bake until done and lightly browned then allow to cool down and serve as desired.
I was right, because this dessert came out pretty very well and enticing. The Lemon meringue crunch recipe which I found from greenscake was very remindful of a classical Victorian cake, but I tweaked the recipe and it still came out very well. Lemon meringue crunch is just perfect for any after-meal dessert or morning breakfast.
I made this lemon meringue crunch dessert for my family and since I am a huge cakes and bakes fan, I couldn't resist this one of course.
