Today started off very misty, windy, cloudy, rainy and chilly and I thought it wise that the only best way of curling up either in bed or sofa is with a delicious bowl of freshly made soup :D Because it is quite cold, some hot spicy, flavourful bowls of warm soup appeared to be the perfect breakfast for me. Besides, because it is weekend, I wasn't even bothered of rushing out of the house, so I have nothing to worry about but to curl up myself, relax and get my mindset ready to face the new week to the fullest.
Interestingly, I had some fresh leeks, parsley leaves, avocados and all the key ingredients needed to make my leek, parsley and avocado soup a success and there YOU go, SOUP IS READY! This recipe is one of the easiest and quickest way of throwing together some fresh vegetables and spicy ingredients for a WINNING outcome.
Ranging from cutting the leeks to picking the parsley leaves, slicing the onions, cutting and scooping out the avocados, cooking the leeks and parsley leaves to blending up the mixture, is such an easy task that even kids can easily do themselves with much ease. Apart from being easy and quick to prepare, this is one soup that is very colourful, aromatic and nutritious.
So, tell me what is not good about this soup that you personally wouldn't want to give it a shot? For some additional spicy flavor, I added some black peppers, red chilli peppers and vegetable stock and topped it all off with a whirl of crème fraîche for some creaminess. It turned out a perfect breakfast to keep me warm on this chilly December Sunday morning.
I love using crème fraîche as a topping for a quick leek, parsley and avocado soup. All of the tasks has already been done, the only thing needed to be done is to dissolve it into a pourable consistency before drizzling over the soup. I love the rich taste and creamy nature that crème fraîche brings to dishes which I deem mind-blowing.
Crème fraîche is always a good option for something creamier but even yoghurt or sour cream can actually do the work. However, you can still enjoy the soup without any toppings, just play around with what suits your tastebud and no doubt you will enjoy this tasty delicacy.
The aroma and flavour combination that both the leeks and parsley leaves render will definitely keep you drooling.
If you've never had homemade leek, parsley and avocado soup before and have only had canned soups, you are just missing quite a lot. Homemade dishes are just phenomenal in the sense that you can just play around with whatever ingredients at hand for a fantastic outcome. Home cooking is definitely not a ROCKET SCIENCE and this is one thing I love about it! Being able to do what one wants to do, at any time for a WINNING result...
Besides, you can easily vouch for the ingredients in your home cooking and you have an upper hand over what you throw into your pot and can easily visualize how your food can turn out to be.
And while I used some fresh leeks, parsley leaves and avocados to make a very delicious soup, no doubt you too can give it a shot. It is also a perfect soup even in the middle of winter when you can still blend up as much as you like.
