My passion for salmon began the first time I visited the fish market where I saw whole salmon fishes at a very cheap price. I bought two salmon on that day and on getting home and cooking up a palatable dish with these fishes, I knew for sure from that moment that this fish is just a perfect fish for me and for everyone.
Since then, I’ve never looked back on this amazing fish. But apart from its palatable taste, researchers also reveal that it is the healthiest fish due to its constituents of essential vitamins and minerals such as vitamin D, omega-3 fatty acids and protein.
As a result of this, these past couple of years have recorded me eating more salmon up to the extent that I virtually use it for preparing most of my meals. Something I enjoy so dearly!

Salmon is just amazing as a lone dish on in assorted dishes such as salad, soup, stew etc. It never disappoints on whichever way you choose to prepare it. It can be poached, steamed, roasted, fried or boiled however, it is totally up to you to decide how to cook your own salmon.
Roasting is just a phenomenal thing to do with salmon as you are basically using dry heat (hot air) to envelop the fish thereby boosting its savoury taste and flavour . Once this is done, the fish is almost dried out of its moisture content thus making it so drooling, salivating and tempting to eat.
I think roasted salmon absolutely complements anything and there is never a dull moment with it. All you need is few minutes on a precious afternoon or evening time and you can boost of this delectable dish. Like I mentioned previously, salmon is just an amazing fish that can perfectly complement any dish! It is absolutely wonderful, especially for someone who enjoys salmon as much as I do.
This roasted salmon is amazingly delicious, tender and soft and was paired with assorted ingredients ranging from tomatoes, lemon, onions, carrots, pepper, bell peppers, spring onions, spinach, knorr stock cube, salt to vegetable oil that roasted into a mouthwatering outcome.
Just as the vegetables and the spices shine through the salmon on these images, so shall the dish itself shine through your oesophagus to the final destination in your stomach as you enjoy it. Honestly, as for the colour, the carrots, spinach, onions and tomatoes truly radiate through.

Even though there is a little bit of preparation work involved, yet it is nothing to be scared of. Yes, I can tell you for sure that preparing this dish is not time consuming or overly difficult.
Just the salmon to clean up and slit up, coupled with a few vegetables to slice up and that’s it for you. Then the oven does the rest of the task for you while you await the arrival of the fish straight out from the oven to comfortably descend on it and do justice to it :D :D :D

Sooooooooooooo, you need not bother yourself about preparing another side dish as it is already deep-rooted in the fish. In case you won’t have the time to cut up the vegetables the day you want to roast the salmon then you can equally cut them up like few days in advance. You can even use frozen vegetables but I believe that using fresh ones is preferable.
I love vegetables on virtually everything! I just love having something to garnish things off. I don’t mind stir frying vegetables and then pairing them up with my main dish but when they are built-in into my dish, it is just magnificent and makes life pretty easy for me.

I won’t end this write-up without mentioning that while I was opening the oven door to pull out my roasted salmon and its components, I was busy gulping in the fragrance of a thoroughly cooked salmon paired with some carrots, lemon, tomatoes and onions.
