Saffron rice is a very palatable Persian and Indian delicacy.
The saffron spice gives the dish a characteristics super flavour and appearance.
We recommend using freshly made broth as it gives the rice a fantastic taste as well.
Also endeavour to use very good saffron spice even though expensive, but it is worth the money.
Soak the saffron threads in a hot water for few minutes before using as this tends to bring out the flavour.

Ingredients:
- 1 parsley leaves
- 1 cup of basmati rice
- Salt to taste
- 2 tsbs. olive oil
- 2 pinches of saffron threads
- 2 cups of chicken broth
- 1 diced onions
Instructions:
- Wash, parboil and drain rice (set aside).
- Meanwhile, soak the saffron threads in a hot water (set aside).
- Heat up oil in a saucepan and stir in onions to fry until golden brown.
- Add rice, saffron, broth, salt to taste and boiling water.
- Cover and allow to cook over low heat until rice is cooked.
- Bring down from heat and serve garnished with parsley leaf or any leaf of choice.
