Try out this simple but yet nutritious, healthy and refreshing vegetarian salad packed with all the nutrient-giving ingredients. This vegetarian salad turned out beautifully colorful and tasteful! A perfect side dish for any main meal.
Although very easy and simple to prepare, the only extra effort involves chopping-up, cutting-up and slicing-up the potatoes and the vegetables. But this doesn't bother me at all, since I always have it at the back of my mind that my salad will be ready within just few extra minutes.
Once that is done, it is then easy to just combine all the ingredients and dressings together for a perfect combination, perfect texture, perfect taste and perfect side dish. I absolutely love everything about this vegetarian salad because it contains all the necessary ingredients within the right proportion--- nothing more, nothing less! Just Yummy!

- 1 pack fresh lettuce
- 2 fresh tomatoes (chopped)
- Garden cress
- 4 cooked baby potatoes (thinly cut)
- 4 radishes (sliced)
- 1 lemon (juiced)
- 1 spring onion (sliced)
- 1 tsp. olive oil
- Wash all the vegetables with salt and clean water, add in a sieve to drain excess water.
- Add all the vegetables and potatoes in a clean bowl and mix together.
- Drizzle with olive oil and lemon juice.
- Serve immediately.
