This recipe is very easy to make and the first step involves going straight to your nearest supermarket to grab the required ingredients, get into the kitchen, put on your apron, set your baking utensils and off you go.................
Mix the flour, salt and sugar to form a dough..
Then mix the remaining ingredients as stipulated in the recipe before cutting into desired shapes.

Ingredients:
- 2/3 cups of almond flour
- 2 cups of baking flour
- 2/3 cup of unsalted softened butter
- 1/4 teaspoon of salt
- 1/3 cup of sugar
- 1 egg
- 1/2 teaspoon of almond extract
- 6 tablespoons of apricot preserve
- 1/3 cup of granulated sugar
Instructions:
- Whisk baking flour, almond flour and salt together in a clean bowl.
- Beat butter and sugars until fluffy in another clean bowl.
- Then beat in the almond extract and egg into same bowl until all has properly combined.
- Then pour in the flour mixture until all the ingredients are thoroughly combined.
- Mix properly with hands to form a dough then allow to stand for at least 2 hours.
- Use a floured rolling-pin to roll out dough up to 1/8-inch thickness on a floured surface.
- Cut into disks or desired shapes but approximately 2 inches in diameter.
- Use a cutter to cut out the centers of half the disks into desirable shape of choice.
- Then you can re-roll the scraps and repeat process.
- Bake in a preheated oven of 180o C.
- Bake for at least 12 minutes or until lightly brown on top.
- Then cool on a wire rack.
- Heat up jam and spread the solid disks with a layer of the hot jam.
- Then glue on the lids pressing down lightly.
- Sprinkle powdered sugar on top, then fill the holes with more jam.
